California Jogger Pinwheels

Ingredients:

2 Mission® Fat Free Burrito Size Flour Tortillas
1 1/2 cups Packaged Salad Mix
12 deli thin Turkey Breast slices
4 slices American Cheese
2 plum Tomatoes sliced
1/2 cup Alfalfa Sprouts
1/2 thinly sliced Avocado (optional)
1/4 cup Mayonnaise Dressing or low fat Mayonnaise
1 Tbsp. Pickle Relish
1 Tbsp. Ketchup

Directions:

1. Top each tortilla with salad greens. Arrange a layer of turkey, cheese, tomatoes, sprouts and avocado onto each tortilla, leaving one inch empty at the bottom.
2. Combine remaining ingredients in a small bowl and blend together. Drizzle dressing over both tortillas.
3. Starting from the top, roll tortilla up and place seamside down onto cutting board. Slice each roll into 8 slices.


Pineapple Chicken Kabob's

Ingredients:

2 lbs. boneless chicken
1 can pineapple slices
3 lg. onions
24 cherry tomatoes
1 pkg. mushrooms
3 lg. peppers
1 bottle Italian salad dressing

Directions: Cut chicken into 1 inch cubes. Marinate in salad dressing for 2-4 hours. Cut pineapple, peppers, onions and mushrooms into bite size pieces. Place ingredients (chicken and pineapple next to each other) on kabob skewers, grill or broil until chicken is thoroughly cooked. Serve over rice.


Portuguese Sweet Bread

Ingredients:

2 pkg active dry yeast
1/2 cup warm potato water
3 tablespoons sugar
1 cup mashed potatoes
1/8 teaspoon ginger
1/2 cup milk
2 teaspoons salt
6 eggs
1 3/4 cups sugar
1/2 cup butter or margarine, melted
8 to 10 cups flour

Directions:
Dissolve yeast in potato water. Stir in the 3 tablespoons sugar, potatoes and ginger. Cover; let rise until doubled. Scald milk; add salt and cool to lukewarm. In small bowl of electric mixer, beat eggs; gradually beat in the 1 3/4 cups sugar. Stir into yeast mixture. Add butter and mix well. Stir in 2 cups of the flour, then milk. Add 2 more cups of the flour; beat 5 minutes. Stir in enough remaining flour to make a stiff dough. Place on lightly floured board and knead int remaining flour until dough is smooth and elastic, about 8 to 10 minutes. Place in greased bowl, turning in grease top. Cover; let rise until doubled. Grease four 9 X 5 X 3-inch loaf pans. On a lightly floured board, divide dough into fourths. Shape each fourth into a loaf; place in prepared pans. Cover; let rise until doubled. Preheat electric oven to 325 degrees F. Bake for 45 minutes or until done. Makes 4 loaves.


Fortune Cookies Ingredients
  • 1 egg white
  • 1/8 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup unbleached all-purpose flour
  • 1/4 cup white sugar
Directions
  1. Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  2. Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  3. Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
  4. Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  5. Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

Churro's

Ingredients:

1 c. water
1 tbsp. sugar
1 tsp. salt
1 c. all-purpose flour
2 eggs
Peel of 1/2 lemon
Fat for deep-fat frying


Granulated sugar or powdered sugarDirections:In saucepan, bring water, sugar, and salt to boiling. Remove from heat. Stir in flour, all at once, and beat until smooth. Beat in eggs, one at a time, until mixture is smooth. Spoon batter into pastry bag fitted with large star point. Pipe 3 inch strips onto waxed paper or floured surface. Add lemon peel to deep fat and heat to 375 degrees. Fry churros, a few at a time, for 3 to 4 minutes or until golden brown, turning as necessary. Drain on paper toweling. Roll in granulated sugar or powdered sugar. Makes 24.


Alaskan Baked Salmon

Ingredients:

  • 2 salmon filets (approx. 1/2 lb each)
  • olive oil
  • tartar sauce

Directions:A quick and easy dish that requires very little effort. It works best with fresh salmon purchased the same day you plan to eat it. Put salmon filets in a glass baking dish. Drizzle a little olive oil over the filets and flip them over a couple of times to spread the oil and get a little oil on the bottom of the baking dish and the under side of the filets. Bake in a 350 degree oven for 15-30 minutes depending on the thickness .
