Blitz

Ingredients:

Batter:
  • 4 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 stick of butter
Glaze
  • Lemons (Real-Lemon or Lime Juice work as well)
  • Confectioners Sugar

Directions:

Preheat the oven to 475°F, and wait for it to heat up FULLY. Take 4 cake pans, and divide up butter evenly into 4 parts.

Place butter in pans and put into the oven. Mix up the remainder of batter ingredients. Check butter. If sizzling madly, pour in the batter. (Chef’s note: Butter will be completely melted. A better description is a pool of butter. Remove from oven, and then tilt the pan in a circular motion until the bottom is covered.) (Chef’s note: Use about  1 ½ full scoops from a medium-size ladle.)

Check after 5 minutes in oven (if at sea level. Higher altitudes may require as much as 10 minutes). When the batter has climbed up the sides, the middle is bumpy, and the top of the bumps and sides are a golden brown, it’s done. Remove the blitz from the oven and place it on a plate. Sprinkle the Confectioner’s sugar on top, depending on how sweet you would like it, and then add the lemon juice on top.

If you desire, the lemon juice can be switched for other kinds of fruit. Berries taste particularly nice when used as a substitute.

* This recipe makes 4 blitz. For each additional blitz, add one egg, ¼ cup milk, and ¼ cup flour. Don't forget to add a fourth of butter for each additional Blitz's cake pan as well!
